Heat treatment

The main ingredient in ketchup is tomatoes. They are boiled to the desired consistency for 1-2 hours. If carrots are present in the recipe, then they are laid out in the pan before the rest of the vegetables for 15-20 minutes. Next, zucchini, apples or eggplants are placed in the ketchup. Last but not least, onions and aromatic herbs. At the very end of cooking, spices, garlic and the main preservatives - salt and sugar - are added to the ketchup. After that, the sauce is boiled for about 20 minutes and immediately packed in sterile jars.

Dishes for long-term storage of homemade canned food must be sterilized. Subject to these simple rules, blanks for the winter are stored even at room temperature for a very long time.

I offer you two recipes for the appetite, which I have already made myself and I was very pleased. On their basis, each housewife will be able to easily process the tomato harvest into high-quality winter preparations.

The closest to the traditional snacks prepared for the winter is the recipe for the appetizer with zucchini and hot peppers. Another recipe for tomato preparation, which can be called an intermediate option between ketchup and a snack, is adjika appetite.

The zucchini harvesting option is more like a vegetable snack.It has a thicker consistency and can be served as a separate dish.

The recipe requires:

  • ripe tomatoes - 3 kg;
  • zucchini - 2 kg;
  • heads of garlic - 4 pcs.;
  • hot pepper - 2 pcs.;
  • refined vegetable oil - 0.2 ml;
  • granulated sugar - 1 glass;
  • salt - 50 g

Tomatoes and zucchini are cut into 2x2 cm pieces. The pepper is cut into strips. Vegetables, sugar, salt are spread in the heated oil. The vegetable mass is stewed over low heat so as not to burn. Hot ready-made snack is laid out in sterile jars. The canned food is hermetically sealed and turned upside down.

Another version of the appetite sauce can be compared with adjika. But we will call it an appetizer or salad, because it is prepared with the addition of apple, sweet pepper, carrots.

To prepare this recipe you will need:

  • ripe tomatoes - 2.5 kg;
  • apples - 500 g;
  • sweet pepper - 500 g;
  • carrots - 500 g;
  • hot peppers - 2 pcs;
  • garlic - 200 g;
  • salt - 50 g;
  • granulated sugar - 1 glass;
  • refined vegetable oil - 1 cup;
  • vinegar essence 6% - 140 g.

Peeled vegetables are chopped in a fine mesh meat grinder. Put on fire and extinguish for about two hours. Hot pepper, granulated sugar are added to the boiled mass.

After 35-40 minutes, the salad mass is seasoned with garlic, salt and vinegar. The finished product is laid out in sterile jars and hermetically sealed. It turns out a spicy, sweet and sour taste of the snack.

A variety of recipes allows you to choose any type of preparation, with zucchini or bell peppers, apples and eggplants. It can include vegetables that require urgent processing.
